Ingredients

3 cups unsweetened shredded coconut
1 cup almond flour
1/2 cup raw honey or maple syrup
1 cup dark chocolate (at least 70% cacao)
1 teaspoon vanilla extract
1 cup almonds
a pinch of sea salt
Instructions
- In a mixing bowl, combine the shredded coconut, almond flour, honey (or maple syrup), and vanilla extract. Stir until well combined and slightly sticky.
- Take a small amount of the mixture and shape it into a ball, about the size of a tablespoon. Press an almond lightly into the center of each ball and set them aside on a parchment-lined baking sheet.
- Place the coconut balls in the refrigerator for about 30 minutes until firm.
- Melt the dark chocolate in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.
- Dip each coconut ball in the melted chocolate, ensuring it’s fully coated, and let excess chocolate drip off.
- Return the coated balls to the parchment-lined sheet and refrigerate until the chocolate has set, about 15-20 minutes.
Notes
For a vegan option, substitute honey with maple syrup and ensure you use dairy-free chocolate.
