A delightful combination of chocolate and coconut that offers a healthier alternative to sugary snacks.


Ingredients

3 cups unsweetened shredded coconut

1 cup almond flour

1/2 cup raw honey or maple syrup

1 cup dark chocolate (at least 70% cacao)

1 teaspoon vanilla extract

1 cup almonds

a pinch of sea salt


Instructions

  1. In a mixing bowl, combine the shredded coconut, almond flour, honey (or maple syrup), and vanilla extract. Stir until well combined and slightly sticky.
  2. Take a small amount of the mixture and shape it into a ball, about the size of a tablespoon. Press an almond lightly into the center of each ball and set them aside on a parchment-lined baking sheet.
  3. Place the coconut balls in the refrigerator for about 30 minutes until firm.
  4. Melt the dark chocolate in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.
  5. Dip each coconut ball in the melted chocolate, ensuring it’s fully coated, and let excess chocolate drip off.
  6. Return the coated balls to the parchment-lined sheet and refrigerate until the chocolate has set, about 15-20 minutes.

Notes

For a vegan option, substitute honey with maple syrup and ensure you use dairy-free chocolate.
