  • Yield: 1 burrito 1x

Description

This avocado and egg breakfast burrito is creamy, cheesy, and satisfying—perfect for busy mornings or lazy weekends. With fluffy scrambled eggs, ripe avocado, and gooey melted cheese wrapped in a warm tortilla, it’s a quick and customizable breakfast that the whole family will love.

Ingredients

Scale

1 large flour tortilla (burrito size, soft and pliable)

2 large eggs (scrambled until fluffy)

1 ripe avocado (mashed for creaminess)

¼ cup shredded cheddar or Monterey Jack cheese (melts beautifully)

Small handful of fresh spinach (optional, adds color and nutrients)

12 tablespoons salsa or hot sauce (for flavor and heat)

1 teaspoon olive oil or butter (for cooking eggs)

Salt and black pepper (to taste)

Instructions

  • arm the tortilla in a dry skillet for 20–30 seconds per side until soft and pliable.

  • Scramble the eggs in a nonstick pan with olive oil or butter, seasoning with salt and pepper. Cook gently until fluffy.

  • Mash the avocado in a small bowl with a fork, leaving some chunks if you like texture. Season with a pinch of salt.

  • Assemble the burrito: Spread mashed avocado on the tortilla, then add scrambled eggs, shredded cheese, and any extras like spinach or salsa.

  • Roll it up: Fold in the sides and roll tightly from the bottom up. For extra crispiness, return to the skillet seam-side down for 1–2 minutes.

  • Serve immediately or wrap in foil for an on-the-go breakfast.

Notes

Make ahead: Wrap burritos tightly in foil and refrigerate for up to 2 days or freeze for up to 1 month.

Reheat: Microwave for 2–3 minutes or bake at 375°F for 15–20 minutes until warm.

Variations: Swap cheese types, add extra veggies, or spice it up with jalapeños or salsa verde.
