Ingredients
1 lb fresh salmon fillets
½ cup panko breadcrumbs
2 green onions, thinly sliced
2 cloves minced garlic
1 large egg
1 teaspoon lemon zest
1 tablespoon chopped dill
Salt to taste
Pepper to taste
1 ripe avocado
¼ cup Greek yogurt
1 tablespoon fresh lime juice
2 tablespoons chopped cilantro (optional)
1 tablespoon olive oil
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it to prevent sticking.
- Prepare the salmon: Remove skin and finely chop or pulse in a food processor until coarsely ground but not pureed.
- Mix the meatball ingredients: In a mixing bowl, combine the chopped salmon, panko breadcrumbs, green onions, minced garlic, egg, lemon zest, chopped dill, salt, and pepper. Mix gently until evenly incorporated.
- Form into meatballs: Scoop about 1.5 tablespoons of the mixture and roll gently into balls. Place on the prepared baking sheet, about 20 meatballs in total. Drizzle olive oil over them.
- Bake for 15-18 minutes until meatballs are lightly golden and firm to the touch.
- While baking, prepare the avocado sauce: In a blender or food processor, combine the ripe avocado, Greek yogurt, fresh lime juice, cilantro (if using), and a pinch of salt. Blend until smooth and creamy.
- Serve the warm salmon meatballs drizzled or dolloped with the creamy avocado sauce. Garnish with extra dill or cilantro if desired.
