Description

Quick and nutritious baked quesadillas loaded with spinach, mushrooms, and cheese.


Ingredients

Flour Tortillas

Spinach

Mushrooms

Cheese (Mozzarella or Monterey Jack)

Onion

Garlic

Olive Oil

Seasonings (Salt, Pepper, Cumin, or Chili Powder)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium heat. Sauté chopped onion and minced garlic for 2-3 minutes.
  3. Add sliced mushrooms and spinach, and cook until spinach is wilted, about 5-7 minutes. Season with salt, pepper, and cumin or chili powder.
  4. On half of a tortilla, layer the vegetable mixture and cheese. Fold the tortilla over.
  5. Bake on a lined baking sheet for 10-15 minutes until golden, flipping halfway.
  6. Cool slightly, slice into wedges, and serve with salsa or guacamole.

Notes

These quesadillas are quick to prepare and can be stored in the refrigerator for up to three days, or frozen for up to three months.
