4 ounces Gorgonzola Cheese
1 whole Baguette
2 tablespoons Olive Oil
1 teaspoon Fresh Rosemary, chopped

Instructions
- Preheat your oven to 400°F (200°C). Season the beef tenderloin with olive oil, salt, and pepper.
- Heat a skillet over medium-high heat and sear the beef for about 2-3 minutes on each side.
- Transfer the seared beef to a baking dish and roast in the oven for approximately 15-20 minutes until it reaches an internal temperature of 130°F (54°C) for medium-rare.
- While the beef is cooking, slice the baguette into 1/2-inch pieces, drizzle with olive oil, and toast in the oven for about 5-7 minutes.
- Once the beef is cooked, let it rest for 5-10 minutes before slicing it thinly. Top each toasted baguette slice with a piece of beef and a dollop of Gorgonzola cheese, sprinkled with fresh rosemary.
- Drizzle with balsamic glaze if desired.

For a lighter option, consider using reduced-fat cheese and whole wheat baguette. Ensure the beef is not overcooked for best texture.
