Ingredients
Oreo Cookies (20-24 cookies)
Unsalted Butter (1/2 cup, melted)
Cream Cheese (24 oz, full-fat)
Granulated Sugar (3/4 cup)
Sour Cream (1 cup)
Red Velvet Cake Mix (1 cup)
Eggs (3 large)
Vanilla Extract (1 tsp)
Whipped Cream (for garnish)
Instructions
- Preheat your oven to 350°F (175°C).
- Crush the Oreo cookies in a food processor until they form fine crumbs.
- Combine the crushed cookies with melted butter and press firmly into the bottom of a 9-inch springform pan.
- In a large mixing bowl, beat cream cheese on medium speed until smooth.
- Gradually add granulated sugar, mixing until well blended.
- Add eggs one at a time, mixing well after each addition.
- Blend in sour cream, red velvet cake mix, and vanilla extract until well combined.
- Pour the cheesecake filling over the prepared crust and smooth it out evenly.
- Bake for 60 minutes, until edges are set and center jiggles slightly.
- Turn off the oven, crack the door, and let the cheesecake cool in the oven for an hour.
- Let it cool completely at room temperature, then chill in the refrigerator for at least 4 hours or overnight.
- Top with whipped cream before serving.
Notes
For a lighter version, substitute Greek yogurt for sour cream and consider using coconut oil instead of butter.
