Ingredients

2 cups all-purpose flour
1 tsp ground ginger
1 tsp ground cinnamon
1 tbsp baking powder
1/2 tsp salt
1/2 cup unsalted butter, cold
1/2 cup brown sugar
3/4 cup buttermilk
1 tsp vanilla extract
1/2 cup Biscoff spread
Milk (for glaze)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine flour, ground ginger, ground cinnamon, baking powder, and salt.
- Cut in the cold unsalted butter until the mixture resembles coarse crumbs.
- Stir in buttermilk and vanilla extract until just combined.
- Turn out onto a floured surface and knead gently before patting into a 1-inch thick disk.
- Cut the disk into 8-10 triangles and place on a lined baking sheet.
- Bake for 20-25 minutes until golden brown.
- While baking, mix Biscoff spread with a little milk to make the glaze.
- Once baked, cool slightly and glaze the scones while warm.
- Serve and enjoy!
Notes
For a gluten-free option, use a gluten-free all-purpose blend. To make them dairy-free, substitute coconut oil for butter and plant-based milk for buttermilk.
