Description

Ingredients

2 cups all-purpose flour

1 tsp ground ginger

1 tsp ground cinnamon

1 tbsp baking powder

1/2 tsp salt

1/2 cup unsalted butter, cold

1/2 cup brown sugar

3/4 cup buttermilk

1 tsp vanilla extract

1/2 cup Biscoff spread

Milk (for glaze)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine flour, ground ginger, ground cinnamon, baking powder, and salt.
  3. Cut in the cold unsalted butter until the mixture resembles coarse crumbs.
  4. Stir in buttermilk and vanilla extract until just combined.
  5. Turn out onto a floured surface and knead gently before patting into a 1-inch thick disk.
  6. Cut the disk into 8-10 triangles and place on a lined baking sheet.
  7. Bake for 20-25 minutes until golden brown.
  8. While baking, mix Biscoff spread with a little milk to make the glaze.
  9. Once baked, cool slightly and glaze the scones while warm.
  10. Serve and enjoy!

Notes

For a gluten-free option, use a gluten-free all-purpose blend. To make them dairy-free, substitute coconut oil for butter and plant-based milk for buttermilk.
