Description

Deliciously healthy Blueberry Banana Baked Oatmeal Cups that are easy to make, packed with nutrients, and perfect for a quick breakfast.


Ingredients

2 cups rolled oats

2 ripe bananas, mashed

1 cup blueberries (fresh or frozen)

1 cup almond milk

1/4 cup honey (or maple syrup)

1 egg (or flax egg for vegan)

1 tsp baking powder

1 tsp cinnamon

1 tsp vanilla extract

1/4 tsp salt


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Lightly grease a 12-cup muffin tin or line with silicone muffin liners.
  3. Mash the ripe bananas in a large mixing bowl until smooth.
  4. Add almond milk, honey, egg, and vanilla extract to the mashed bananas; whisk until smooth.
  5. In another bowl, combine rolled oats, baking powder, cinnamon, and salt; stir to mix.
  6. Gradually add the dry mixture to the wet; fold gently until just combined.
  7. Gently fold in the blueberries.
  8. Spoon the mixture into the prepared muffin tin, filling each cup about 3/4 full.
  9. Bake for 25-30 minutes or until the tops are golden brown and a toothpick comes out clean.
  10. Cool in the tin for 5-10 minutes before transferring to a wire rack.

Notes

These oatmeal cups can be stored in the fridge for up to 1 week or frozen in individual portions for up to 3 months. Microwave to reheat when needed.
