4 slices sturdy sourdough or hearty country loaf bread
6 oz white cheddar cheese, sliced or shredded
1/2 cup fresh blueberries
2 tbsp unsalted butter, for grilling
1 tsp honey (optional)
1 tsp fresh thyme, chopped (optional)
Instructions
Rinse the fresh blueberries and pat dry. If using thyme, finely chop and set aside. Slice or shred the white cheddar cheese for even melting.
Lay out two slices of bread. Sprinkle half the cheddar evenly on one slice. Scatter blueberries over the cheese, then drizzle honey and sprinkle thyme if using. Top with the remaining cheese, then cover with the second bread slice.
Spread a thin, even layer of butter on the outside of each sandwich—this ensures a golden, crispy crust.
Place a non-stick skillet or cast iron pan over medium heat. Once hot, add the sandwich and let it cook, undisturbed, for 3-4 minutes until cheese bubbles and bread is golden-brown.
