Description

A delicious twist on the classic Sloppy Joes, using ground chicken and zesty Cajun flavors for a quick and satisfying weeknight meal.


Ingredients

1 lb ground chicken

2 tbsp Cajun seasoning

1 onion, diced

1 cup bell peppers, diced

2 cloves garlic, minced

1 cup tomato sauce

1 tbsp Worcestershire sauce

2 tbsp brown sugar

4 sandwich buns

Optional toppings: shredded cheese, pickles, coleslaw


Instructions

  1. Sauté the diced onions and bell peppers in a splash of olive oil over medium heat for 5-7 minutes until softened.
  2. Add the minced garlic and cook for an additional minute until fragrant.
  3. Add the ground chicken, breaking it up, and cook until no longer pink, about 5-6 minutes.
  4. Stir in the Cajun seasoning, Worcestershire sauce, tomato sauce, and brown sugar, mixing well.
  5. Reduce heat and let the mixture simmer for about 10 minutes.
  6. While simmering, toast the buns in a skillet or toaster.
  7. Assemble the filling onto the toasted buns, adding optional toppings as desired.

Notes

For a lower-carb option, you can serve the filling in lettuce wraps instead of buns.
