Description

Carpathian Cake is a luxurious, multi-layered dessert that combines rich flavors and textures, rooted in Eastern European traditions.

4 Eggs

1 cup Granulated Sugar

2 cups All-Purpose Flour (or gluten-free blend)

1/2 cup Butter (unsalted)

1 cup Milk (whole or almond)

2 tsp Baking Powder

1 cup Sour Cream (or Greek yogurt)

1/2 cup Cocoa Powder (Dutch-processed)

2 tsp Vanilla Extract

1/2 cup Chopped Nuts (walnuts or hazelnuts, optional)


Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a bowl, whisk together the flour, cocoa powder, baking powder, and a pinch of salt.
  3. In a separate large bowl, beat the eggs and sugar together until pale and fluffy.
  4. Melt the butter and let it cool slightly. Combine it with the milk and vanilla in a measuring cup. Gradually add this mixture to the egg and sugar blend, mixing well.
  5. Add the dry ingredients little by little into the wet mixture. Mix just until combined.
  6. Fold in the sour cream and chopped nuts if using.
  7. Divide the batter between the prepared pans and smooth the tops. Bake for 30 to 35 minutes.
  8. Allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks. Frost with your favorite frosting or whipped cream layer once completely cool.

Notes

For a healthier option, use coconut sugar instead of granulated sugar, and consider low-fat substitutes for butter and milk.
