4 Boneless Chicken Breasts
1/2 cup Unsalted Butter (softened)
4 Garlic Cloves (minced)
1/4 cup Fresh Parsley (chopped)
2 tbsp Lemon Juice
1 tsp Paprika
1 cup Bread Crumbs
2 Eggs (lightly beaten)
1/2 cup All-Purpose Flour
Salt and Pepper to taste
Instructions
- Prepare the Garlic Butter Filling: Mix the softened butter with garlic, parsley, lemon juice, paprika, salt, and pepper. Shape into a log and freeze for 15 minutes.
- Prepare the Chicken: Pound each chicken breast to 1/4 inch thick between plastic wrap.
- Stuff the Chicken: Cut the chilled garlic butter into pieces and place on each chicken breast. Fold and roll tightly, securing with toothpicks.
- Bread the Chicken: Set up a breading station with seasoned flour, beaten eggs, and bread crumbs. Dredge the chicken in flour, dip in eggs, then coat in bread crumbs.
- Cook the Chicken: Heat oil in a skillet over medium heat and cook the chicken parcels for 7-10 minutes on each side until golden brown and cooked through.
- Serve: Let rest for a few minutes, then slice to reveal the garlic butter and enjoy.

Ensure the chicken is cooked thoroughly using a meat thermometer. Feel free to experiment with herbs in the breadcrumb mixture.
