Ingredients
Chicken Breast
Potatoes (Yukon Gold or Russet)
Carrots
Celery
Onion
Garlic
Chicken Broth
Herbs (Thyme and Bay Leaf)
Salt and Pepper
Heavy Cream (optional)
Instructions
- Gather and prep ingredients: wash, peel, and chop vegetables; dice potatoes; slice carrots and celery; mince garlic; chop chicken.
- Sauté the aromatics: heat olive oil in a large pot, add onions, and cook for 5 minutes until translucent, then add garlic for 1 minute.
- Add chicken and vegetables: stir in diced chicken, cook until no longer pink (5-7 minutes), then add carrots, celery, and potatoes.
- Pour in the broth: add chicken broth and bring to a boil.
- Season and simmer: add herbs, salt, and pepper; reduce heat, cover, and simmer for 30 minutes.
- Finish and serve: stir in heavy cream if desired, taste and adjust seasoning, remove bay leaf, and ladle soup into bowls.
Notes
Consider using low-sodium broth to control salt levels. A splash of heavy cream can add richness but can be omitted for a lighter soup.
