4 boneless, skinless chicken breasts
3–4 cloves garlic, chopped
2 tablespoons olive oil
1/2 cup dry white wine
1 cup chicken broth
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
Salt and pepper to taste
Fresh parsley, chopped, for garnish
Instructions
- Gather and prepare all ingredients.
- In a large skillet, heat olive oil over medium-high heat. Season chicken with salt and pepper, and sear until golden brown, about 5-6 minutes. Remove and set aside.
- Reduce heat to medium, add garlic to the skillet, and sauté for 30 seconds until fragrant.
- Pour in white wine to deglaze the pan and simmer for 2-3 minutes.
- Add chicken broth and cream, then stir in Parmesan cheese until melted.
- Return the chicken to the skillet, coating it with the sauce, and simmer for 5 minutes.
- Cook the creamy garlic Parmesan rice separately, using a 2:1 ratio of water to rice with garlic and salt for flavor.
- Serve the chicken scampi over the rice, garnished with parsley and additional Parmesan.
Notes
For a lighter dish, substitute heavy cream with a low-fat option. Use whole grain rice for added fiber.
