Description

Ingredients

4 boneless, skinless chicken breasts

34 cloves garlic, chopped

2 tablespoons olive oil

1/2 cup dry white wine

1 cup chicken broth

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped, for garnish


Instructions

  1. Gather and prepare all ingredients.
  2. In a large skillet, heat olive oil over medium-high heat. Season chicken with salt and pepper, and sear until golden brown, about 5-6 minutes. Remove and set aside.
  3. Reduce heat to medium, add garlic to the skillet, and sauté for 30 seconds until fragrant.
  4. Pour in white wine to deglaze the pan and simmer for 2-3 minutes.
  5. Add chicken broth and cream, then stir in Parmesan cheese until melted.
  6. Return the chicken to the skillet, coating it with the sauce, and simmer for 5 minutes.
  7. Cook the creamy garlic Parmesan rice separately, using a 2:1 ratio of water to rice with garlic and salt for flavor.
  8. Serve the chicken scampi over the rice, garnished with parsley and additional Parmesan.

Notes

For a lighter dish, substitute heavy cream with a low-fat option. Use whole grain rice for added fiber.
