½ cup unsalted butter, softened
3 large eggs
1 cup milk
1 tablespoon vanilla extract
2 cups strawberries, hulled and sliced
8 ounces dark chocolate, melted
Instructions
- Preheat your oven to 350°F (175°C).
- Grease and flour two 9-inch round cake pans.
- In a large bowl, whisk together the cake flour, sugar, baking powder, salt, and cocoa powder until well combined.
- Cream the softened butter in another bowl until fluffy.
- Beat in the eggs one at a time, then mix in the milk and vanilla extract.
- Gradually add the dry mixture into the wet ingredients, stirring until just combined.
- Gently fold in the sliced strawberries.
- Divide the batter evenly between the prepared pans and bake for 25 to 30 minutes.
- Allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks.
- While your cake cools, dip the hulled strawberries in the melted dark chocolate.
- Once the cakes are completely cool, place one layer on a serving plate and add frosting or ganache if desired. Top with the second layer and repeat.
- Finish by arranging the chocolate-covered strawberries on top.
Notes
For a lighter version, consider using yogurt instead of butter and for a vegan option, substitute eggs with flax eggs.
