Instructions
Preheat your oven to 325°F (160°C) and arrange four small ramekins in a baking dish, ensuring they’re spaced evenly.
In a medium saucepan over medium heat, combine the heavy cream and whole milk. Warm it gently until it’s steaming but not boiling—watch for tiny bubbles forming at the edges.
Remove from the heat and immediately stir in the chopped bittersweet chocolate until completely melted and the mixture becomes glossy.
Whisk together egg yolks, sugar, espresso powder, vanilla extract, and a pinch of salt in a bowl until smooth and pale.
Slowly pour the warm chocolate cream into the egg yolk mixture, whisking constantly to temper the eggs and avoid scrambling. The mixture should be smooth and velvety.
Pour the custard evenly into the ramekins, filling them nearly to the top.
Carefully pour hot water into the baking dish, coming halfway up the sides of the ramekins to create a gentle water bath.
Bake for 35-40 minutes, or until the custards are just set around the edges but still slightly wobbly in the center.
Remove ramekins from the water bath and let cool to room temperature, then cover with plastic wrap and chill for at least 3 hours, or overnight for best flavor and texture.
