  • Instructions

  • Preheat your oven to 325°F (160°C) and arrange four small ramekins in a baking dish, ensuring they’re spaced evenly.
  • In a medium saucepan over medium heat, combine the heavy cream and whole milk. Warm it gently until it’s steaming but not boiling—watch for tiny bubbles forming at the edges.
  • Remove from the heat and immediately stir in the chopped bittersweet chocolate until completely melted and the mixture becomes glossy.
  • Whisk together egg yolks, sugar, espresso powder, vanilla extract, and a pinch of salt in a bowl until smooth and pale.
  • Slowly pour the warm chocolate cream into the egg yolk mixture, whisking constantly to temper the eggs and avoid scrambling. The mixture should be smooth and velvety.
  • Pour the custard evenly into the ramekins, filling them nearly to the top.
  • Carefully pour hot water into the baking dish, coming halfway up the sides of the ramekins to create a gentle water bath.
  • Bake for 35-40 minutes, or until the custards are just set around the edges but still slightly wobbly in the center.
  • Remove ramekins from the water bath and let cool to room temperature, then cover with plastic wrap and chill for at least 3 hours, or overnight for best flavor and texture.
