Description

Ingredients

1 cup almond flour

1 cup granola

1 tsp baking powder

1 tsp cinnamon

1/4 tsp salt

1/2 cup melted coconut oil

1/2 cup honey or maple syrup

1 large egg or flaxseed egg

1 tsp vanilla extract

2 cups cherries, fresh or frozen


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×9-inch baking dish with coconut oil or line with parchment paper.
  3. In a large mixing bowl, combine almond flour, granola, baking powder, cinnamon, and salt. Stir until evenly mixed.
  4. In a separate bowl, whisk together melted coconut oil, honey (or maple syrup), egg, and vanilla extract.
  5. Pour wet ingredients into dry mixture and stir until just combined.
  6. Gently fold in the cherries.
  7. Transfer the batter to the prepared baking dish and smooth the top. Bake for about 25 minutes.
  8. Allow to cool completely before slicing into squares.

Notes

For a vegan version, use a flaxseed egg. Make sure to allow the bars to cool completely before cutting to avoid crumbling.
