Ingredients

1 cup almond flour
1 cup granola
1 tsp baking powder
1 tsp cinnamon
1/4 tsp salt
1/2 cup melted coconut oil
1/2 cup honey or maple syrup
1 large egg or flaxseed egg
1 tsp vanilla extract
2 cups cherries, fresh or frozen
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9×9-inch baking dish with coconut oil or line with parchment paper.
- In a large mixing bowl, combine almond flour, granola, baking powder, cinnamon, and salt. Stir until evenly mixed.
- In a separate bowl, whisk together melted coconut oil, honey (or maple syrup), egg, and vanilla extract.
- Pour wet ingredients into dry mixture and stir until just combined.
- Gently fold in the cherries.
- Transfer the batter to the prepared baking dish and smooth the top. Bake for about 25 minutes.
- Allow to cool completely before slicing into squares.
Notes
For a vegan version, use a flaxseed egg. Make sure to allow the bars to cool completely before cutting to avoid crumbling.
