6 cups day-old bread, cubed (brioche, challah, or sandwich bread)

4 large eggs, beaten

1 cup whole milk

½ cup heavy cream

½ cup granulated sugar

2 teaspoons vanilla extract

2 teaspoons ground cinnamon, divided

3 tablespoons unsalted butter, melted

½ cup granulated sugar + 1 teaspoon ground cinnamon (for topping)


Instructions

  • Preheat oven to 350°F (175°C) and grease a 12-cup muffin tin.

  • In a large bowl, whisk together eggs, milk, cream, sugar, vanilla, and 1 teaspoon cinnamon until smooth.

  • Add bread cubes, tossing gently to coat. Let soak for 5 minutes, stirring once or twice.

  • Divide mixture evenly into muffin tin, filling cups nearly to the top.

  • Bake 25–30 minutes, until golden and set in the center.

  • Brush warm muffins with melted butter, then sprinkle generously with cinnamon-sugar topping.

  • Cool for 5 minutes before serving warm.

Notes

Bread tip: Day-old bread works best. If using fresh bread, toast cubes in the oven for 10 minutes first.

Storage: Store in an airtight container in the fridge for 3 days or freeze up to 3 months. Reheat in oven or microwave before serving.
