Description
These cinnamon sugar French toast muffins are the perfect make-ahead breakfast or brunch treat. Soft and custardy inside, golden on the outside, and topped with sweet cinnamon sugar, they’re a cozy twist on a classic favorite.
Ingredients
6 cups day-old bread, cubed (brioche, challah, or sandwich bread)
4 large eggs, beaten
1 cup whole milk
½ cup heavy cream
½ cup granulated sugar
2 teaspoons vanilla extract
2 teaspoons ground cinnamon, divided
3 tablespoons unsalted butter, melted
½ cup granulated sugar + 1 teaspoon ground cinnamon (for topping)
Instructions
Preheat oven to 350°F (175°C) and grease a 12-cup muffin tin.
In a large bowl, whisk together eggs, milk, cream, sugar, vanilla, and 1 teaspoon cinnamon until smooth.
Add bread cubes, tossing gently to coat. Let soak for 5 minutes, stirring once or twice.
Divide mixture evenly into muffin tin, filling cups nearly to the top.
Bake 25–30 minutes, until golden and set in the center.
Brush warm muffins with melted butter, then sprinkle generously with cinnamon-sugar topping.
Cool for 5 minutes before serving warm.
Notes
Bread tip: Day-old bread works best. If using fresh bread, toast cubes in the oven for 10 minutes first.
Storage: Store in an airtight container in the fridge for 3 days or freeze up to 3 months. Reheat in oven or microwave before serving.
Variations: Try adding chocolate chips, fresh berries, or chopped nuts for a fun twist.
