Ingredients
1 cup cottage cheese (small curd, creamy)
3 large eggs, separated
¼ teaspoon cream of tartar
½ cup blueberries (fresh or frozen)
1 tablespoon honey or maple syrup (optional)
½ teaspoon vanilla extract
Pinch of salt
Instructions
Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper and lightly spray with nonstick spray.
Separate the eggs, placing whites in one bowl and yolks in another.
Add cream of tartar to the egg whites and beat with a mixer until stiff peaks form.
In the yolk bowl, mix cottage cheese, vanilla, salt, and honey/maple syrup (if using).
Gently fold the whipped egg whites into the yolk mixture. Be careful not to overmix.
Fold in the blueberries, then scoop batter onto the prepared baking sheet into 6–8 mounds.
Bake for 25–30 minutes, or until tops are golden and slightly firm.
