Country French Garlic Soup (Authentic Comfort in a Bowl)

  • Author: Nina Caldwell
  • Total Time: 1 hour
  • Yield: 4 servings

Description

A cozy, rustic French soup made with 40 cloves of garlic simmered to mellow perfection, then blended into a silky, creamy broth. Perfectly comforting and aromatic, this authentic Country French Garlic Soup feels like a warm hug from the French countryside.

Ingredients

40 cloves of garlic (about 3 heads) – When simmered, they turn sweet, nutty, and buttery.

2 tablespoons unsalted butter – Adds depth and richness.

1 tablespoon olive oil – Prevents the butter from burning and enhances flavor.

2 medium yellow onions, sliced thin – Melt into sweetness and balance the garlic.

6 cups chicken or vegetable broth – Choose low-sodium to control salt.

1 teaspoon fresh thyme (or ½ tsp dried) – Brings earthy aroma.

2 bay leaves – Infuses the broth with subtle herbal notes.

½ teaspoon sea salt – Adjust to taste.

¼ teaspoon black pepper – Rounds out the flavors.

2 egg yolks – Tempered for a velvety finish.

½ cup heavy cream – For that signature French silkiness.

Fresh parsley, chopped – For garnish.

Crusty baguette slices, toasted – Perfect for dipping and soaking up flavor.

Instructions

  • Sauté aromatics: In a heavy-bottomed pot, melt butter and olive oil. Add sliced onions and cook until translucent and golden, about 8–10 minutes.

  • Add garlic and herbs: Stir in garlic, thyme, bay leaves, salt, and pepper. Sauté gently for 10 minutes until fragrant.

  • Simmer: Pour in broth, bring to a simmer, and cook uncovered for 30–35 minutes until garlic is soft and sweet.

  • Blend: Remove bay leaves and blend soup until smooth and creamy. Return to pot over low heat.

  • Temper yolks: Whisk egg yolks and cream in a bowl. Slowly add a ladle of hot soup while whisking, then pour back into the pot. Stir gently until thickened (do not boil).

  • Serve: Taste, adjust seasoning, and ladle into bowls. Garnish with parsley and serve with toasted baguette slices.

Notes

For deeper flavor, roast half of the garlic before adding it to the soup.

Use coconut milk instead of cream for a dairy-free version.

Leftovers store well in the fridge for up to 3 days; reheat gently over low heat.

Avoid boiling after adding egg yolks and cream to maintain smooth texture.
