Ingredients
2 tablespoons olive oil
2 tablespoons unsalted butter
1 yellow onion, diced
2 carrots, chopped
2 celery stalks, chopped
4 cloves garlic, minced
1/4 cup all-purpose flour
4 cups chicken or vegetable broth
2 cups whole milk (or 2% for lighter)
1 cup heavy cream
1 cup freshly grated Parmesan cheese
1 teaspoon Italian seasoning
1/4 teaspoon red pepper flakes (optional)
2 cups fresh spinach or kale (optional)
1–2 cups cooked chicken or Italian sausage (optional)
Salt and freshly cracked black pepper, to taste
Instructions
Heat olive oil and butter in a large soup pot over medium heat. Add onion, carrots, and celery; sauté 5–7 minutes until softened.
Stir in garlic; cook 30 seconds until fragrant.
Sprinkle flour over vegetables and stir to coat. Cook 1–2 minutes to eliminate raw flour taste.
Slowly whisk in broth. Simmer gently, stirring, until slightly thickened.
Reduce heat to low and add milk and cream. Do not boil.
Season with Italian seasoning and red pepper flakes. Simmer 15–20 minutes.
Remove from heat; stir in Parmesan until melted. Adjust seasoning with salt and pepper.
Add spinach or kale, plus chicken or sausage if using. Stir until warmed through.
Serve hot with crusty bread, garnished with Parmesan and fresh herbs.
Notes
Use freshly grated Parmesan for the best flavor and melt.
To freeze: cool completely, store up to 2 months. Add greens after reheating for best texture.
