Description

A nutritious and delicious side dish featuring sweet potatoes baked to perfection and topped with creamy feta cheese.


Ingredients

4 medium sweet potatoes

1 cup feta cheese, crumbled

2 tablespoons olive oil

2 cloves garlic, minced

Black pepper to taste

Fresh herbs (optional), such as parsley or thyme


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the sweet potatoes thoroughly and pierce them several times with a fork. Place them on a baking sheet lined with parchment paper.
  3. Bake sweet potatoes for 45 minutes or until tender.
  4. While the sweet potatoes bake, heat olive oil in a pan over medium heat, add garlic, and sauté for 2 minutes.
  5. Remove sweet potatoes from the oven, cut them open slightly, and fluff the insides with a fork.
  6. Drizzle the sautéed garlic and olive oil over each potato.
  7. Crumble feta cheese over the top and season with black pepper and fresh herbs.
  8. Return the sweet potatoes to the oven for an additional 5-10 minutes to melt the feta cheese.

Notes

For a dairy-free option, replace feta with marinated tofu. Other variations include using Greek yogurt or topping with chickpeas for added protein.
