4 medium sweet potatoes
1 cup feta cheese, crumbled
2 tablespoons olive oil
2 cloves garlic, minced
Black pepper to taste
Fresh herbs (optional), such as parsley or thyme
Instructions
- Preheat your oven to 400°F (200°C).
- Wash the sweet potatoes thoroughly and pierce them several times with a fork. Place them on a baking sheet lined with parchment paper.
- Bake sweet potatoes for 45 minutes or until tender.
- While the sweet potatoes bake, heat olive oil in a pan over medium heat, add garlic, and sauté for 2 minutes.
- Remove sweet potatoes from the oven, cut them open slightly, and fluff the insides with a fork.
- Drizzle the sautéed garlic and olive oil over each potato.
- Crumble feta cheese over the top and season with black pepper and fresh herbs.
- Return the sweet potatoes to the oven for an additional 5-10 minutes to melt the feta cheese.
Notes
For a dairy-free option, replace feta with marinated tofu. Other variations include using Greek yogurt or topping with chickpeas for added protein.
