Pasta (Penne or Fusilli)
Chorizo (Fresh or Cured)
Heavy Cream
Garlic (Fresh minced)
Onion (Finely chopped yellow)
Parmesan Cheese (Freshly grated)
Spinach (Fresh)
Olive Oil
Salt

Instructions
- Boil salted water in a large pot, add pasta, and cook until al dente (8-10 minutes). Drain and reserve a cup of pasta water.
- In a large skillet, heat olive oil and crumble in the chorizo. Cook until browned (5-7 minutes).
- Add chopped onions and minced garlic, and sauté until onions are translucent (3-4 minutes).
- Lower the heat and stir in heavy cream, simmering until the sauce thickens (3-5 minutes).
- Mix in parmesan cheese until melted, add spinach, and let it wilt (2-3 minutes).
- Add cooked pasta to the skillet, tossing gently. Use reserved pasta water to adjust sauce consistency if needed.
- Season with salt, pepper, and Italian seasoning before serving.
Notes
For a lighter option, substitute heavy cream with half-and-half. Whole wheat pasta can be used for added fiber.
