Description

A delicious and creamy pasta dish featuring smoky chorizo and a rich sauce, perfect for weeknight dinners or special occasions.


Ingredients

Pasta (Penne or Fusilli)

Chorizo (Fresh or Cured)

Heavy Cream

Garlic (Fresh minced)

Onion (Finely chopped yellow)

Parmesan Cheese (Freshly grated)

Spinach (Fresh)

Olive Oil

Salt

Pepper

Italian Seasoning


Instructions

  1. Boil salted water in a large pot, add pasta, and cook until al dente (8-10 minutes). Drain and reserve a cup of pasta water.
  2. In a large skillet, heat olive oil and crumble in the chorizo. Cook until browned (5-7 minutes).
  3. Add chopped onions and minced garlic, and sauté until onions are translucent (3-4 minutes).
  4. Lower the heat and stir in heavy cream, simmering until the sauce thickens (3-5 minutes).
  5. Mix in parmesan cheese until melted, add spinach, and let it wilt (2-3 minutes).
  6. Add cooked pasta to the skillet, tossing gently. Use reserved pasta water to adjust sauce consistency if needed.
  7. Season with salt, pepper, and Italian seasoning before serving.

Notes

For a lighter option, substitute heavy cream with half-and-half. Whole wheat pasta can be used for added fiber.
