Ingredients

1 lb Ground Beef or Turkey

1 cup Breadcrumbs

1/2 cup Parmesan Cheese, grated

1 Egg

2 cloves Garlic, minced

1 can Diced Tomatoes

1 cup Heavy Cream or Coconut Milk

1 tbsp Italian Seasoning

2 cups Spinach or Kale

4 cups Chicken or Vegetable Broth

2 tbsp Olive Oil


Instructions

  1. In a large mixing bowl, combine the ground beef or turkey, breadcrumbs, Parmesan, egg, minced garlic, and Italian seasoning. Mix until just blended.
  2. Shape the mixture into small meatballs, heat olive oil in a pot, and brown the meatballs on all sides for 8-10 minutes.
  3. Add more olive oil if needed and sauté diced onions for about 3-4 minutes. Then, add minced garlic and sauté for another minute.
  4. Stir in the diced tomatoes and broth, bringing to a gentle simmer, scraping the bottom to release flavorful bits.
  5. Add the browned meatballs back and let simmer for 15-20 minutes.
  6. Stir in the cream or coconut milk and greens; cook for an additional 5 minutes until the greens are wilted.
  7. Adjust seasoning with salt and pepper before serving hot.

Notes

Serve with crusty bread or over pasta. Garnish with fresh basil or chili flakes if desired.
