Ingredients

1 lb Ground Beef or Turkey
1 cup Breadcrumbs
1/2 cup Parmesan Cheese, grated
1 Egg
2 cloves Garlic, minced
1 can Diced Tomatoes
1 cup Heavy Cream or Coconut Milk
1 tbsp Italian Seasoning
2 cups Spinach or Kale
4 cups Chicken or Vegetable Broth
2 tbsp Olive Oil
Instructions
- In a large mixing bowl, combine the ground beef or turkey, breadcrumbs, Parmesan, egg, minced garlic, and Italian seasoning. Mix until just blended.
- Shape the mixture into small meatballs, heat olive oil in a pot, and brown the meatballs on all sides for 8-10 minutes.
- Add more olive oil if needed and sauté diced onions for about 3-4 minutes. Then, add minced garlic and sauté for another minute.
- Stir in the diced tomatoes and broth, bringing to a gentle simmer, scraping the bottom to release flavorful bits.
- Add the browned meatballs back and let simmer for 15-20 minutes.
- Stir in the cream or coconut milk and greens; cook for an additional 5 minutes until the greens are wilted.
- Adjust seasoning with salt and pepper before serving hot.
Notes
Serve with crusty bread or over pasta. Garnish with fresh basil or chili flakes if desired.
