Ingredients

2 Russet Potatoes
2 tablespoons Olive Oil
Sea Salt to taste
Ground Black Pepper to taste
1 cup Cheddar Cheese, shredded
1/2 cup Sour Cream
2 tablespoons Chopped Green Onions
1/2 cup Crispy Bacon Bits
Instructions
- Preheat your air fryer to 400°F (200°C). Wash the russet potatoes thoroughly and dry them.
- Pierce each potato with a fork and air fry for about 20 minutes until tender.
- Let potatoes cool for 5 minutes, then cut in half and scoop out some flesh.
- Brush the insides with olive oil and sprinkle with sea salt and pepper.
- Place the halves skin-side up in the air fryer basket and cook for 8-10 minutes until crispy.
- Sprinkle with cheddar cheese and bacon bits, return to air fryer for 3-5 minutes until cheese is melted.
- Top with sour cream and green onions before serving.
