Delicious and crunchy taquitos filled with tender shredded chicken and melted cheese, perfect for parties and gatherings.
Ingredients

2 cups cooked chicken, shredded
1 cup shredded cheese (cheddar and Monterey Jack)
½ cup sour cream
1 teaspoon taco seasoning
12 small corn tortillas
Cooking oil (for frying)
Fresh cilantro (for garnish)
Instructions
- In a mixing bowl, combine the shredded chicken, cheese, sour cream, and taco seasoning. Stir until well incorporated.
- Warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side or microwave for 15 seconds.
- Spoon around 2 tablespoons of the filling mixture onto one end of each warmed tortilla and roll it tightly. Place seam-side down on a plate.
- In a large skillet, heat about ½ inch of oil over medium heat. Once hot, add the taquitos seam-side down. Fry for about 2-3 minutes on each side until golden brown and crispy.
- Remove the cooked taquitos and place them on a paper towel-lined plate to absorb excess oil. Garnish with fresh cilantro before serving.
Notes
These taquitos can be baked instead of fried for a healthier option. Just preheat the oven to 400°F and bake for 20-25 minutes.
