2 cups graham cracker crust
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
16 oz cream cheese, softened
1 cup sour cream
1 cup granulated sugar (for filling)
3 large eggs
1 cup raspberry puree
1 tsp vanilla extract
Pink food coloring (optional)
Instructions
- Preheat your oven to 325°F (160°C). In a medium bowl, mix the crushed graham crackers with granulated sugar and melted butter until combined. Press this mixture firmly into the bottom of a 9-inch springform pan for an even crust.
- Place the crust in the preheated oven and bake for about 10 minutes, or until lightly golden.
- In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add in the sugar (1 cup) and blend until fully incorporated.
- Add each egg one at a time, mixing on a low speed, until just combined.
- Blend in the sour cream and vanilla extract until smooth.
- Gently fold the raspberry puree into the cheesecake mixture.
- If desired, add a few drops of pink food coloring to achieve that gorgeous velvet hue.
- Pour the filling over the pre-baked crust, smoothing the top with a spatula. Bake in the oven for about 1 hour.
- Remove the cheesecake from the oven and allow it to cool at room temperature for about 1 hour. Then, wrap it in plastic wrap and refrigerate for at least 4 hours or overnight.
- Once chilled, carefully remove the cheesecake from the springform pan. Top with additional raspberry puree or fresh raspberries before slicing and serving.
Notes
For a vegan version, substitute eggs with flax eggs and use dairy-free alternatives for cream cheese and sour cream.
