Instructions

  • Make the custard: In a mixing bowl, whisk together eggs, half-and-half, espresso, sugar, vanilla, and salt until smooth.

  • Soak the bread: Dip each slice of bread into the custard for 20–30 seconds per side, ensuring it’s well coated but not soggy.

  • Cook the French toast: Heat a buttered skillet over medium heat. Cook slices for 3–4 minutes per side, until golden brown and crisp on the edges.

  • Whip the mascarpone: Beat mascarpone, cream, powdered sugar, vanilla, and coffee liqueur (if using) until soft peaks form.

  • Make the ganache: Heat cream just to a simmer, then pour over chocolate and cocoa powder. Let sit for 1 minute, then stir until smooth and glossy.

  • Assemble: Layer or stack French toast, top with whipped mascarpone, drizzle with ganache, and dust with cocoa powder. Add berries if desired.

  • Serve immediately and enjoy warm with coffee or espresso.

Notes

Use day-old bread for the best texture — fresh bread tends to get soggy.

For a lighter version, replace mascarpone with Greek yogurt or whipped ricotta.

You can bake instead of fry: 375°F (190°C) for 15–20 minutes, flipping halfway.
