Description

A vibrant salsa combining sweet peaches and tart cherries, perfect for enhancing summer BBQs or casual gatherings.


Ingredients

2 Fresh Peaches, diced

1 cup Sweet Cherries, pitted and quartered

1/2 Red Onion, finely chopped

1 Jalapeño, finely chopped

Juice of 1 Lime

1/4 cup Fresh Cilantro, chopped

Pinch of Salt


Instructions

  1. Wash and pit the cherries, chop into quarters. Peel and dice the peaches.
  2. Peel and finely chop the red onion.
  3. Remove stem from the jalapeño, cut in half, remove seeds, and finely chop.
  4. In a mixing bowl, combine peaches, cherries, red onion, and jalapeño. Toss gently.
  5. Squeeze lime juice over mixture and fold in cilantro. Stir gently to combine.
  6. Add a pinch of salt, taste, and adjust seasoning as necessary. Serve immediately or chill for 30 minutes.

Notes

This salsa is best enjoyed fresh but can be stored for up to 3 days in the refrigerator.
