1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1 cup granulated sugar
1 egg
1 teaspoon vanilla extract
1 cup pastry cream
1 cup chocolate ganache
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.
- In a separate bowl, beat the softened butter and sugar together until light and fluffy (approximately 3-5 minutes).
- Mix in the egg and vanilla extract until fully integrated.
- Carefully fold the dry ingredients into the wet mixture, ensuring not to over-mix.
- Using a tablespoon, scoop out portions of dough and roll them into balls. Place them on the prepared baking sheet, spacing them 2 inches apart.
- Bake for 10-12 minutes or until the edges are set but the centers remain soft. Let them cool on the baking sheet for a couple of minutes before transferring to a wire rack.
- Once cooled, cut a small “X” on the top of each cookie and gently squeeze in pastry cream until you see it peeking out.
- Pour chocolate ganache evenly over each filled cookie, allowing it to set before serving.
Notes
Avoid overmixing the dough for a light texture. Let cookies cool before filling to prevent melting of the pastry cream.
