Ingredients
2 slices bread (sourdough, multigrain, or your favorite)
½ cup ricotta cheese (whole milk recommended for creaminess)
2 large eggs
1 tablespoon butter
Salt and pepper, to taste
Optional toppings: fresh herbs, chili flakes, honey, or olive oil
Instructions
Toast the bread until golden and crisp.
Whisk the eggs in a small bowl with a pinch of salt.
Melt butter in a skillet over medium-low heat. Add eggs and cook slowly, stirring gently, until soft and fluffy.
Spread ricotta generously over the toasted bread.
Top with scrambled eggs. Season with salt, pepper, and any optional toppings.
