Ingredients
2 cups mini pretzels (plus more as needed)
1 cup creamy peanut butter (natural or regular)
2 tablespoons softened butter
½ cup powdered sugar
1 teaspoon vanilla extract
1 ½ cups chocolate chips or melting chocolate
Flaky sea salt (optional, for topping)
Instructions
In a medium bowl, mix together peanut butter, butter, powdered sugar, and vanilla until smooth and thick.
Roll teaspoon-sized scoops of the mixture into small balls.
Sandwich each peanut butter ball between two pretzels and gently press to flatten.
Melt the chocolate in the microwave (20-second intervals, stirring) or using a double boiler until smooth.
Dip each pretzel sandwich halfway (or fully) in chocolate and place on a parchment-lined tray.
Sprinkle with flaky sea salt or toppings of choice.
Refrigerate for 20 minutes, or until chocolate is set.
