1 cup cherries, fresh or jarred


Instructions

  1. Preheat the oven to 350°F (175°C) and line a 15×10-inch baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the eggs and granulated sugar until light and fluffy, about 3-5 minutes.
  3. Sift together the all-purpose flour, cocoa powder, baking powder, and salt in a separate bowl.
  4. Gently fold the dry ingredients into the egg mixture with a spatula, being careful not to deflate it.
  5. Pour the batter onto the prepared baking sheet and spread it evenly. Bake for 12-15 minutes until cooked through.
  6. Let the cake cool for 5 minutes, then roll it up with a kitchen towel sprinkled with powdered sugar and let it cool completely.
  7. Beat the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
  8. Unroll the cooled cake, spread the whipped cream evenly, and add cherries on top.
  9. Carefully roll the cake back up, wrap it tightly, and refrigerate for at least 30 minutes to set.
  10. Slice the cake roll into thick pieces and serve chilled.
