1 cup cherries, fresh or jarred
Instructions
- Preheat the oven to 350°F (175°C) and line a 15×10-inch baking sheet with parchment paper.
- In a large mixing bowl, whisk together the eggs and granulated sugar until light and fluffy, about 3-5 minutes.
- Sift together the all-purpose flour, cocoa powder, baking powder, and salt in a separate bowl.
- Gently fold the dry ingredients into the egg mixture with a spatula, being careful not to deflate it.
- Pour the batter onto the prepared baking sheet and spread it evenly. Bake for 12-15 minutes until cooked through.
- Let the cake cool for 5 minutes, then roll it up with a kitchen towel sprinkled with powdered sugar and let it cool completely.
- Beat the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
- Unroll the cooled cake, spread the whipped cream evenly, and add cherries on top.
- Carefully roll the cake back up, wrap it tightly, and refrigerate for at least 30 minutes to set.
- Slice the cake roll into thick pieces and serve chilled.
Notes
Use high-quality cocoa powder for the best flavor. Consider using coconut sugar for a healthier alternative.
