1 cup all-purpose flour
2 tbsp granulated sugar
1 tbsp baking powder
1/4 tsp salt
1 large egg
1 cup milk
1/2 cup pureed berries
1 tsp vanilla extract
Butter or oil for cooking
Instructions
- Preheat your non-stick skillet or griddle over medium heat.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, whisk the egg, milk, berry puree, and vanilla extract until well mixed.
- Make a well in the center of the dry ingredients and pour in the wet mixture. Stir gently until just combined.
- Add butter or oil to your griddle. Pour 1/4 cup of batter onto the skillet for each pancake. Cook for about 3-4 minutes, then flip and cook for another 2-3 minutes until golden brown.
- While the pancakes cook, mash remaining berries in a small pot. Heat gently and simmer for a few minutes until syrupy.
- Stack your fluffy pancakes, drizzle with berry syrup, and top with extra berries or whipped cream.
Notes
Avoid overmixing the batter and ensure the griddle is adequately preheated for best results.
