Description

Ingredients

1 cup all-purpose flour

2 tbsp granulated sugar

1 tbsp baking powder

1/4 tsp salt

1 large egg

1 cup milk

1/2 cup pureed berries

1 tsp vanilla extract

Butter or oil for cooking


Instructions

  1. Preheat your non-stick skillet or griddle over medium heat.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a separate bowl, whisk the egg, milk, berry puree, and vanilla extract until well mixed.
  4. Make a well in the center of the dry ingredients and pour in the wet mixture. Stir gently until just combined.
  5. Add butter or oil to your griddle. Pour 1/4 cup of batter onto the skillet for each pancake. Cook for about 3-4 minutes, then flip and cook for another 2-3 minutes until golden brown.
  6. While the pancakes cook, mash remaining berries in a small pot. Heat gently and simmer for a few minutes until syrupy.
  7. Stack your fluffy pancakes, drizzle with berry syrup, and top with extra berries or whipped cream.
