- 1 cup granulated sugar
- 1 tablespoon baking powder

- 2 large eggs
- 1/2 cup unsalted butter, melted
- 3/4 cup fresh cranberries
- 1/2 cup fresh orange juice
- 1 tablespoon orange zest
- 1 cup powdered sugar (for glaze)
Instructions
- Gather all your ingredients on your countertop.
- Preheat your oven to 350°F (175°C).
- Grease a 9×5 inch loaf pan with butter or line it with parchment paper.
- In a medium bowl, whisk together the flour, granulated sugar, baking powder, and salt until well combined.
- In a large bowl, beat the eggs and then add in the melted butter, orange juice, and orange zest. Mix until smooth.
- Gradually add the dry mixture into the wet mixture, stirring gently until just combined.
- Fold in the fresh cranberries.
- Pour the batter into your prepared loaf pan and smooth the top.
- Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
- Let it cool in the pan for about 10 minutes before transferring to a wire rack. Prepare glaze and drizzle it over the loaf once cool.
Notes
Avoid over-mixing the batter for a tender loaf. Store in an airtight container at room temperature for up to 3 days.
