Bell Peppers (mixed red, yellow, and green)

Ground Turkey

Cooked Brown Rice

Tomato Sauce

Onion (chopped)

Garlic (chopped)

Shredded Cheese (or vegan cheese for a dairy-free option)

Cumin

Chili Powder

Pepper


Instructions

  1. Preheat your oven to 350°F (175°C). Chop the bell peppers, onions, and garlic.
  2. In a large skillet over medium heat, sauté the chopped onions and garlic for 2-3 minutes until fragrant.
  3. Add ground turkey to the skillet and cook for 5-7 minutes until browned.
  4. Stir in the brown rice, tomato sauce, chopped bell peppers, and spices. Cook for another 5 minutes.
  5. Transfer the mixture to a greased casserole dish and spread evenly.
  6. Top with shredded cheese.
  7. Bake in the preheated oven for 25 minutes or until the cheese is melted and bubbly.
  8. Let cool for a few minutes before serving warm.
