Pizza Dough (homemade or pre-made)
2 tablespoons Olive Oil
1 head Garlic
2 cups Fresh Spinach
1 cup Ricotta Cheese
1 cup Feta Cheese (crumbled)
2 cups Mozzarella Cheese (shredded)
¼ cup Parmesan Cheese (grated)
Black Pepper (to taste)
Zest of 1 Lemon
Instructions
- Preheat your oven to 475°F (245°C).
- Take a whole head of garlic, slice the top off, drizzle with olive oil, and wrap in foil. Roast in the oven for about 30 minutes.
- Roll out the pizza dough on a floured surface to your desired thickness.
- Spread a layer of olive oil on the rolled-out dough.
- In a bowl, combine ricotta, 1 cup of mozzarella, crumbled feta, and black pepper. Stir in the roasted garlic.
- Spread the cheese mixture evenly over the dough, leaving a little space at the edges. Scatter fresh spinach on top and finish with the remaining mozzarella and sprinkle of Parmesan.
- Transfer the pizza to the oven and bake for 15-20 minutes until the crust is golden and the cheese is bubbly.
- Drizzle more olive oil and grate fresh lemon zest over the hot pizza before slicing.
