Pizza Dough (homemade or pre-made)

2 tablespoons Olive Oil

1 head Garlic

2 cups Fresh Spinach

1 cup Ricotta Cheese

1 cup Feta Cheese (crumbled)

2 cups Mozzarella Cheese (shredded)

¼ cup Parmesan Cheese (grated)

Black Pepper (to taste)

Zest of 1 Lemon


Instructions

  1. Preheat your oven to 475°F (245°C).
  2. Take a whole head of garlic, slice the top off, drizzle with olive oil, and wrap in foil. Roast in the oven for about 30 minutes.
  3. Roll out the pizza dough on a floured surface to your desired thickness.
  4. Spread a layer of olive oil on the rolled-out dough.
  5. In a bowl, combine ricotta, 1 cup of mozzarella, crumbled feta, and black pepper. Stir in the roasted garlic.
  6. Spread the cheese mixture evenly over the dough, leaving a little space at the edges. Scatter fresh spinach on top and finish with the remaining mozzarella and sprinkle of Parmesan.
  7. Transfer the pizza to the oven and bake for 15-20 minutes until the crust is golden and the cheese is bubbly.
  8. Drizzle more olive oil and grate fresh lemon zest over the hot pizza before slicing.

For healthier options, consider using whole wheat dough or low-fat cheese alternatives. Pair with a salad or marinara sauce for a complete meal.
