1 ½ cups mixed nuts (almonds, walnuts, pecans), lightly toasted
1 cup rolled oats (gluten-free if needed)
½ cup natural nut butter (almond or peanut, or sunflower seed butter for allergies)
¼ cup honey or maple syrup
1 tsp vanilla extract
¼ tsp sea salt
½ cup dark chocolate chips or chopped dark chocolate
Optional add-ins: dried cranberries, chia seeds, or shredded coconut
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving overhang for easy removal.
- Combine toasted nuts and oats in a large bowl.
- Microwave nut butter and honey or maple syrup for 20-30 seconds until warm. Stir in vanilla extract and sea salt until smooth.
- Pour sticky mixture over dry ingredients and mix until evenly coated and clumping.
- Press mixture firmly and evenly into prepared pan using a spatula or flat-bottom glass.
- Bake for 15-18 minutes until edges are golden and bars smell toasted. Let cool completely in pan.
- Melt chocolate in microwave or double boiler until smooth.
- Drizzle melted chocolate over cooled bars and refrigerate for 15 minutes to set. Cut into squares or rectangles.
