Ingredients

1 bell pepper (red, yellow, or green), sliced
1 zucchini, chopped
2 carrots, thinly sliced
1 cup broccoli florets
1 red onion, diced
2 cloves garlic, minced
2 tablespoons olive oil
Salt and pepper to taste
1 tablespoon lemon juice
Instructions
- Wash all your vegetables. Slice bell peppers, chop zucchini, thinly slice carrots, and cut broccoli into florets. Dice the red onion and mince the garlic.
- In a large skillet, heat the olive oil over medium heat until it shimmers.
- Add the sliced red onion to the pan and cook for 2-3 minutes until translucent.
- Next, toss in the sliced carrots and broccoli florets, and sauté for another 3-4 minutes.
- After the broccoli softens, add the bell peppers and zucchini; sauté for an additional 3-4 minutes until all vegetables are cooked but vibrant.
- Add minced garlic, and season with salt and pepper. Stir well and cook for about a minute until fragrant.
- Remove from heat and drizzle with lemon juice. Toss everything together.
- Serve hot as a colorful side dish.
