1 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup brown sugar, packed
1 large egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup fruit jam (your choice)
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the softened butter, granulated sugar, and brown sugar. Beat on medium speed until light and fluffy, about 3-5 minutes.
- Add the egg and vanilla extract, then beat again until fully incorporated.
- In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add this mixture to the wet ingredients, mixing until just combined.
- Cover the dough with plastic wrap and refrigerate for at least 30 minutes.
- Roll out the chilled dough to about 1/4 inch thick and cut with heart-shaped cookie cutters.
- Place the cut cookies on a lined baking sheet and bake for 12-15 minutes, until the edges are golden.
- Once cooled, spread a layer of jam onto half of the cookies and top with the cut-out cookies.
Notes
For a vegan option, substitute butter with coconut oil and use a flaxseed egg or applesauce instead of the egg.
