Description

Delightful heart-shaped cookies filled with your choice of fruit jam, perfect for sharing memories and enjoying baking.


Ingredients

1 cup unsalted butter, softened

1/2 cup granulated sugar

1/2 cup brown sugar, packed

1 large egg

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking powder

1/4 teaspoon salt

1/2 cup fruit jam (your choice)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the softened butter, granulated sugar, and brown sugar. Beat on medium speed until light and fluffy, about 3-5 minutes.
  3. Add the egg and vanilla extract, then beat again until fully incorporated.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add this mixture to the wet ingredients, mixing until just combined.
  5. Cover the dough with plastic wrap and refrigerate for at least 30 minutes.
  6. Roll out the chilled dough to about 1/4 inch thick and cut with heart-shaped cookie cutters.
  7. Place the cut cookies on a lined baking sheet and bake for 12-15 minutes, until the edges are golden.
  8. Once cooled, spread a layer of jam onto half of the cookies and top with the cut-out cookies.

Notes

For a vegan option, substitute butter with coconut oil and use a flaxseed egg or applesauce instead of the egg.
