Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the flour, cocoa powder, baking soda, and salt; whisk until blended.
  3. Cream together the butter and sugar in a separate bowl until light and fluffy.
  4. Stir in the peppermint extract.
  5. Gradually mix the dry ingredients into the wet ingredients until a dough forms.
  6. Shape small balls and place them on a parchment-lined baking sheet, flattening them slightly.
  7. Bake for 10-12 minutes until the edges are set.
  8. Melt the chocolate chips in a microwave-safe bowl, stirring every 30 seconds until smooth; mix in peppermint extract.
  9. Dip each cooled cookie into the melted chocolate and set them aside to harden.
