Ingredients
Mascarpone Cheese (16 oz)
Ladyfinger Cookies (24 pieces)
Fresh Cherries (2 cups)
Amaretto Liqueur (1/2 cup)
Granulated Sugar (1/2 cup)
Eggs (3 large)
Vanilla Extract (1 tsp)
Cocoa Powder for Dusting
Instructions
- Prepare the Cherries: Pit and chop the cherries, combine with 1/4 cup sugar and 1/4 cup amaretto, and let rest for 15 minutes.
- Make the Mascarpone Mixture: Whisk egg yolks with remaining sugar until thick, then fold in mascarpone and vanilla until smooth.
- Beat the Egg Whites: Beat egg whites until stiff peaks form, then gently fold them into the mascarpone mixture.
- Assemble the Tiramisu: Quickly dip each ladyfinger in the cherry mixture and layer them with mascarpone and cherry in a dish.
- Chill: Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
- Serve: Dust with cocoa or nuts, slice, and enjoy.
Notes
For a lighter option, consider using ricotta and Greek yogurt instead of mascarpone. Use pasteurized eggs for safety.
