4 boneless, skinless chicken breasts
1 cup pecorino romano cheese, grated
1/4 cup fresh lemon juice
1 tablespoon lemon zest
3 garlic cloves, minced
2 tablespoons extra virgin olive oil
1 cup breadcrumbs
Fresh herbs (parsley or oregano), for garnish
Salt and pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C) and lightly coat a baking sheet with olive oil.
- In a bowl, mix lemon juice, minced garlic, salt, and pepper. Marinate the chicken in this mixture for at least 15 minutes.
- In another bowl, combine breadcrumbs, grated pecorino cheese, and lemon zest.
- Remove chicken from marinade, let excess liquid drip off, and dredge in the breadcrumb mixture.
- Place the coated chicken on the prepared baking sheet and drizzle with olive oil. Bake for 20 to 25 minutes until golden brown and cooked through (internal temperature of 165°F or 75°C).
- Let rest for a few minutes, garnish with fresh herbs, and serve with a squeeze of lemon juice.
Notes
For added flavor, consider using chicken thighs instead of breasts. Leftovers can be stored in the fridge for up to three days.
