Ingredients

  • 4 medium zucchini, chopped
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 large onion, diced
  • 1 can (28 oz) whole canned tomatoes
  • A handful of fresh basil, chopped
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients: Wash and chop the zucchini, dice the onion, and mince the garlic.
  2. Sauté the onion and garlic: Heat olive oil over medium heat in a large skillet, then add onion and sauté until translucent, about 5 minutes. Add minced garlic and sauté for 1-2 minutes.
  3. Introduce the zucchini: Add cubed zucchini and cook for 8-10 minutes until tender.
  4. Add tomatoes and season: Pour in canned tomatoes and break them down with a spoon. Season with salt and pepper.
  5. Simmer: Reduce heat and let sauce simmer for 15-20 minutes.
  6. Infuse with basil and cheese: In the last 5 minutes, add chopped basil and grated Parmesan.
  7. Serve and enjoy: Serve over pasta or use as a base for pizza or lasagna.

Notes
