1 box Jiffy Corn Muffin Mix
1 can whole kernel corn, drained
1 can creamed corn
1 cup sour cream
1/2 cup melted butter
1 cup shredded cheddar cheese
2 eggs
Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9×9-inch baking dish with nonstick spray or butter.
- In a large mixing bowl, combine Jiffy Corn Muffin Mix, whole kernel corn, creamed corn, sour cream, melted butter, cheddar cheese, and eggs. Stir until mixed.
- Pour the mixture into the prepared baking dish and spread evenly.
- Bake for 40-45 minutes until the top is golden brown and a toothpick inserted in the center comes out clean.
- Let it cool for 5-10 minutes before serving.
Notes
Feel free to substitute Greek yogurt for sour cream or use olive oil instead of butter.
