Description

A delightful and easy-to-make Jiffy Corn Casserole that’s perfect for family gatherings and potlucks.


Ingredients

1 box Jiffy Corn Muffin Mix

1 can whole kernel corn, drained

1 can creamed corn

1 cup sour cream

1/2 cup melted butter

1 cup shredded cheddar cheese

2 eggs

Salt and pepper to taste


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×9-inch baking dish with nonstick spray or butter.
  3. In a large mixing bowl, combine Jiffy Corn Muffin Mix, whole kernel corn, creamed corn, sour cream, melted butter, cheddar cheese, and eggs. Stir until mixed.
  4. Pour the mixture into the prepared baking dish and spread evenly.
  5. Bake for 40-45 minutes until the top is golden brown and a toothpick inserted in the center comes out clean.
  6. Let it cool for 5-10 minutes before serving.

Notes

Feel free to substitute Greek yogurt for sour cream or use olive oil instead of butter.
