Ingredients
Fresh Lemons (4-5, zest and juice)
Granulated Sugar (3/4 cup)
Unsalted Butter (1/2 cup)
All-Purpose Flour (1 1/4 cups)
Eggs (3 large)
Heavy Whipping Cream (1 cup)
Powdered Sugar (2 tablespoons)
Vanilla Extract (1 teaspoon)
Instructions
- Preheat oven to 350°F (175°C). Cream together unsalted butter and granulated sugar until smooth.
- Add all-purpose flour gradually, mixing until just combined. Press dough into a 9-inch tart pan and prick the bottom with a fork.
- Bake for 15 minutes; let cool.
- Whisk together lemon juice, zest, eggs, and granulated sugar in a separate bowl. Mix in melted butter and pour filling into the cooled tart crust.
- Bake for 20-25 minutes or until set but slightly jiggly in the center. Cool completely and chill in the fridge for at least 2 hours.
- Whip heavy cream until soft peaks form, then add powdered sugar and vanilla extract until stiff peaks form.
- Slice chilled tart and top with whipped lemon cream before serving.
