1 cup Pearl Couscous
1 tablespoon Lemon Zest
2 tablespoons Lemon Juice
1 teaspoon Turmeric Powder
2 tablespoons Olive Oil
1.5 cups Vegetable Broth
1/4 cup Fresh Parsley, chopped
Salt and Pepper, to taste
Instructions
- In a medium saucepan, bring the vegetable broth to a boil over medium heat.
- In a separate pan, heat the olive oil over medium heat. Add the pearl couscous and toast it lightly for 3-4 minutes.
- Once the couscous is toasted, add the boiling vegetable broth and a pinch of salt. Stir, cover, and let it simmer for 10 minutes.
- Remove from heat and fluff the couscous with a fork. Stir in the lemon zest, lemon juice, turmeric powder, and chopped parsley.
- Add salt and pepper according to your taste.
- Transfer the couscous to a serving bowl or plate.
