Ingredients

1 lb Chicken Breasts (boneless, skinless)

4 cups Vegetable Broth

3 cloves Garlic (minced)

2 Shallots (finely diced)

2 Carrots (diced)

2 Celery Stalks (diced)

2 cups Spinach (fresh)

1 tsp Dried Oregano

1 tsp Thyme (dried or fresh)

1/2 tsp Chili Flakes

2 tbsp Olive Oil

1/4 cup Parmesan Cheese (for garnish)

1 tbsp Lemon Juice


Instructions

  1. In a large pot, heat olive oil over medium heat. Add garlic and shallots, sauté until fragrant (2-3 minutes).
  2. Add chicken breasts to the pot, browning for 5 minutes on each side until they gain color.
  3. Stir in diced carrots and celery, cooking for another 5 minutes.
  4. Pour in vegetable broth, add oregano, thyme, and chili flakes. Bring to a gentle boil, then reduce to simmer.
  5. After 15 minutes, remove and shred chicken, then return to the pot.
  6. Add spinach and lemon juice, simmer for another 5 minutes.
  7. Ladle soup into bowls and top with grated Parmesan cheese.
