A fresh and healthy twist on traditional tacos, packed with colorful vegetables and Mediterranean flavors.
Ingredients

1 lb chicken breast, diced
2 tbsp olive oil
3 garlic cloves, minced
2 tbsp lemon juice
1 tsp oregano
1 tsp paprika
1 cup cherry tomatoes, halved
1 cucumber, diced
1 red onion, sliced
1/2 cup crumbled feta cheese
8 taco shells (soft tortillas or crunchy corn)
Instructions
- In a medium bowl, combine olive oil, minced garlic, lemon juice, oregano, and paprika. Add diced chicken breast, stirring well to coat. Marinate for at least 15 minutes.
- Heat a skillet over medium heat. Add the marinated chicken and cook for 5-7 minutes until browned and cooked through.
- Chop the vegetables and combine them in a bowl, tossing gently to mix.
- On each taco shell, add a spoonful of chicken followed by a handful of mixed vegetables. Sprinkle crumbled feta cheese on top.
- Serve warm or at room temperature, drizzling with extra lemon juice if desired.
Notes
For a vegetarian option, substitute chicken with tofu. Use whole wheat wraps for added fiber.
