Description

Delightful bite-sized treats perfect for festive gatherings, offering rich flavors and moist textures in a convenient serving size.

Ingredients

Scale
  • 2 cups all-purpose flour (or whole wheat flour)
  • 1 cup granulated sugar (or brown sugar)
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, room temperature (or coconut oil)
  • 2 large eggs (or flax eggs)
  • 2 tsp vanilla extract (or almond extract)
  • 1 cup milk (or almond milk/oat milk)
  • 1 tsp festive spices (e.g., cinnamon, nutmeg, ginger)
  • Optional toppings: powdered sugar, festive sprinkles, simple glaze

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Lightly grease your mini bundt pan with non-stick spray or butter and dust it with flour.
  3. In a medium bowl, whisk together the flour, baking powder, salt, and your chosen spices.
  4. In a larger mixing bowl, beat the unsalted butter and granulated sugar together until pale and fluffy, about 3-4 minutes.
  5. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  6. Gradually add the dry ingredient mixture to the wet ingredients, alternating with the milk.
  7. Spoon the batter into the prepared mini bundt pan, filling each compartment about three-quarters full.
  8. Place the bundt pan in the preheated oven and bake for 20-25 minutes.
  9. Allow the bundt cakelets to cool in the pan for about 10 minutes, then turn them out onto a wire rack.
  10. Once cooled, dust with powdered sugar or drizzle with a simple glaze.

Notes

Optional to add chocolate chips or chopped nuts to the batter before filling the bundt pan.
